Fish Need
to Relax to Taste Better It's a stressful job, living in a fish tank
and waiting to be grilled. But a Greek university is making great progress
in getting fish to relax and, according to researchers, taste better.
Fish living in water tanks under artificial lighting tend to suffer
severe stress and depression, Sofronios Papoutsoglou, Professor of Applied
Hydrobiology at Athens' Geoponic University, told a Greek daily newspaper.
This changes the way the fish taste, he said. For the past 10 years
Papoutsoglou has researched conditions for fish in captivity and has
come up with a number of golden rules to make them taste better, including
customizing water tank color to the species, providing ‘play’time in
the tanks and improving the quality of their food. Greece is the biggest
farmer of Mediterranean fish, exporting over 60,000 tonnes of bream
